Looking for what’s new and exotic in cocktails? If the answer is yes, then descend into Kimchee’s new subterranean basement bar in Holborn, where Korean concoctions flow in the Zen like lounge. It feels a world away from the bustle of Central London and the queues upstairs for Kimchee’s very popular cuisine.
Escape from the inevitable rain and take a mini break to Korea via your taste buds. Sip on authentic Korean booze, such as Soju and Umeshu or try various tantalising cocktails like the‘Nabi Dance’ with hints of pink grapefruit, sujeonggwa syrup with Flor de Cana white rum (see recipe below) or how about a ‘Bubble Tok Tok’ complete with bursting lychee bubbles. If you prefer something a little less energetic sounding then check out the Old Fashioned style drink ‘East Sea Truce’, featuring a hefty helping of Hakushu whisky.
To celebrate ‘Don’t mind if we do Thursdays’ which is something we have just made up, here is your very own Kimchee cocktail recipe for Nabi Dance.
30ml Flor de Cana White Rum
15ml Sujeonggwa Syrup
15ml Pink Grapefruit Juice
15ml Pear Puree
15ml Lychee Juice
Dash of Sparkling (Japanese) Wine
Shake ingredients together with ice and serve in a coupette with a dash of bitters on top.
