Happy frickin summer! It’s hot-ish (for now); it’s sunny-ish (for now) so let us jubilate with a drink! For this month’s post of #DontMindIfIDoThursday, we bring you a super summery cocktail called The Pineapple Shrub, from the American inspired fusion of dining, drinking and live performance that is Honky Tonk, Chelsea.
Propping up with bar with one eye ball on the bartender making us an array of cocktails to ‘try’ and the other on the screen showing Wimbledon, we were feeling all a glow with the joys of summer. Simple pleasures are sometimes the best, a little sun, a lot of loaded Nachos and big icy cocktail. #BringItOn!
We suggest you get to Honky Tonk for some ‘Hanky Pank’ with some seriously big plates of grub, have a go with the beer trolley and even a little bit of star spotting (we were sat next to legend that is Jimmy Page – the Led Zeppelin guitar player).
If you can’t get down there yourself and have the Honk Tonksters make you a well-deserved drink, then we suggest you chill out for now and be your own bartender. This is how you can do it:
The Pineapple Shrub
50mls Appleton White Rum
37.5mls of Pineapple Shrub (will explain how to make below)
50mls Ginger Beer
4 Mint leaves
Glass: Large jam jar or hi-ball will do
Method: Smack or slap (as you prefer) your 4 mint leaves (to release the oils) and place in bottom of your glass, add a big scope of crushed ice, add in your rum, shrub mix, mix, then top with ginger beer and tops with more crushed ice. Garnish with a juicy piece of Pineapple and or mint spring.
Add a suitably decorative straw.
We really must say that Honky Tonk managed to serve up the best Nachos that we have EVER had… so make sure you leave some space for those or steal their technique when making them ‘en casa’ (lots of sloppy toppings, in, under, over and all around the nachos!). And maybe a GIANT milkshake (with a shot of rum in it…Ohps!)
There is a Honky Tonk in Chelsea and Clapham Common. Go hungry or be really annoyed with yourselves.
